Bacon is a special product in Sichuan, Guizhou, Shaanxi, Hunan, Hubei and other central and western regions, which has a history of thousands of years.

Bacon, named after salting meat in winter, is made by air drying or smoking. In the cold winter months, Chinese people who take home as their social constituent cells will sit around under the lamp in front of the stove, eat bacon, set off firecrackers and bid farewell to the old and welcome the new. The deliciousness of bacon and all kinds of cured meat products gradually blended into the elements and happiness of home.

The traditional custom of processing bacon is not only long-standing, but also widespread. Every winter and twelfth lunar month, that is, before the light snow arrives in beginning of spring, every household kills pigs and butchers sheep. Apart from keeping enough fresh meat for the New Year, the rest is salted with fresh salt and a certain proportion of spices such as pepper, aniseed, star anise, cinnamon, clove, etc. After 7 ~ 15 days, they are strung with palm leaf ropes, dripped with water and processed. Choose cypress branches, sugarcane skins, cedrela bark or firewood to smoke and bake slowly, and then hang them up and smoke them slowly with fireworks.
